Kuding Spear Tea (Bitter Tear) is an unusual Chinese tea with a pronounced bitter taste, highly valued for its health benefits. It is made from twisted spear or needle-shaped leaves of the broad-leaved holly (Ilex kudingcha). The drink is known in China as a natural tonic, helping to cleanse the body, normalize blood pressure, improve digestion and reduce body temperature.

How to brew Spears Kudin tea?
European method:
- Use a kettle or cup.
- Pour 1–2 “spear” of 200–300 ml of water at a temperature of 80–90°C.
- Steep for 1–2 minutes (do not overdo it to avoid excessive bitterness).
- Can be brewed 2–3 times.
Chinese method (gongfu cha):
- Take a gaiwan or small teapot, use 3–4 g of Kudin per 100 ml.
- Rinse the leaves with hot water (a quick 2–3 second rinse).
- Brew at a temperature of 85–90°C in short bursts (10–20 seconds).
- You can make 4–6 pours, gradually discovering the taste.
