Blue Matcha (or Blue Matcha) is a natural powder from the flowers of Anchan (Clitoria ternatea), known as "Thai blue tea" or "butterfly pea". It is caffeine-free, has a calming effect, a bright blue color and a neutral herbal taste. Perfect for aesthetic lattes, cocktails, desserts and natural food coloring.
Anchan is traditionally used in Asia as a tonic for vision, concentration, and memory. Its distinctive feature is its color change: when lemon juice is added, the drink turns from blue to purple.
