Dong Ding Oolong, also known as Frosty Peak Oolong, is a classic Taiwanese mid-fermented oolong. It originates from Nantou County, where the tea is grown at altitudes of over 1,000 meters. The name “Dong Ding” translates to “frosty peak” and accurately conveys the purity, light coolness, and mountain elegance of this tea.
The drink has a soft, multifaceted taste - floral and creamy with sweet fruity and slightly roasted notes. The aroma is delicate, with shades of cream, smoke and wild orchid. The infusion is transparent, light amber, with a pleasant softness.
Origin and production
Dong Ding Oolong is made by hand: the tea leaves are lightly fermented (20–30%) and roasted over charcoal or electric ovens, which preserves the aroma and mineral structure. It is this technology that makes Dong Ding one of Taiwan’s most respected oolongs, popular with both tea novices and experienced gongfu tea connoisseurs.

Gongfu Cha:
- Take 6–7 g per 100 ml
- The first shedding is quick to awaken the leaf
- Water temperature 90–95°C, pouring time 10–25 seconds
- Can be brewed up to 7–8 times
European method:
- 1 teaspoon per cup + 1 per teapot
- Water — 90–95°C
- Infuse for 2–3 minutes
- Brews up to 2–3 times
