The Zhongtou method is a traditional technique used specifically for elite green teas, such as Long Jing:
- Place 3–4 g of tea in a tall glass or clear teapot.
- Pour half the water (80–85°C) first to slowly open the tea leaves.
- Wait 2–3 minutes for the leaves to gently sink to the bottom, and add the second half of the water.
- The tea is ready to drink - you can drink it straight from the glass or pour it into a cup. Long Jing can be brewed 2–3 times.
The Zhongtou method allows you to maximize the aroma, texture, and richness of flavor, while avoiding bitterness or excessive astringency.
