Longjing (龙井), or Dragon Well, is one of the most famous and revered green teas in China, listed as one of the “Ten Famous Teas of China.” It is grown in Zhejiang Province, near the village of the same name, Longjing, known for its clean springs and mineral-rich soil. It is produced using tender spring leaves that are hand-pressed using a special pressing technique.

The history of Long Jing tea:
Legend has it that once, during a drought, the villagers of Longjing appealed to an ancient dragon, who supposedly lived in a well, to bring them rain. The dragon took pity, and after the rain, the water in the well became exceptionally clean. The tea grown nearby became so fragrant and delicious that it was named after the dragon. Longjing eventually became the imperial tea, served to the highest court and foreign guests.

How to brew Long Jing green tea:
Chinese method (gongfu cha):
- Take 4–5 g per 100–120 ml of gaiwan or tall glass.
- Water temperature is 80–85°C.
- The first flush (3–5 seconds) is a flush, not a drink.
- Brew in short bursts of 10–20 seconds. Makes 5–7 bursts.
European method:
- Take 3–4 g per 250 ml of water.
- Temperature - 80–85°C.
- Brew for 2–3 minutes.
