Tai Ping Hou Kui Green Tea (Taiping Monkey Leader) is one of the most popular Chinese green teas sold for export. A relatively young variety, appeared in 1900.
In 2004, the International Tea Exhibition recognized him as the «Tea King».
The name Tai Ping Hou Kui means: Tai Ping - the county where tea is produced, Hou - the village of Houkeng, where his fame came from, Kui - the master who gave life to tea.
Raw materials are produced - Anhui province, an area of the legendary Yellow Mountains at an altitude of 700 meters above sea level. Tea trees grow near one of the pristine Tai Ping lakes, surrounded by constant scenic fogs. Due to the noticeable temperature fluctuations, the leaves are saturated with sweetness and acquire an amazing, unusually interesting taste.
The pickers only have 14 days a year to prepare for this tea variety. Only special branches are used - a delicate bud with a white pile, «embraced» by 2 large leaves. In Chinese tea production, the shoot is called "one peak and two knives", due to which the variety is classified as a blade type.
Raw materials are processed on the day of collection. Initially, it is lightly roasted, then the leaves are pressed by hand using a cloth and dried in an oven. This special technology leaves behind a mark: on every long, flat and straight tea leaf, you can see a graceful checkerboard print. Looks incredibly beautiful!
The infusion is transparent, with a hint of yellow almonds.
